Preparation
Cut the mushrooms and the remaining radicchio into thin strips
Prepare separate Parmesan cheese cut into thin slivers
Whisk in a cup, extra virgin olive oil with lemon juice salt and pepper to obtain an dressing amalgam
Arrange the mushrooms , chopped chicory and parmesan into the cups formed by chicory leaves and drizzle with the dressing spread on the cups , add on the top coarsely chopped chives.
Allow to stand for about 20 minutes before serving
