Ingredients for 6 people
- 350 g of tattlerβs
- 150 g of shrimps
- 20 mussels
- 1 celery
- 4 spring onions
- 1 garlic
- 1 bunch of parsley
- ½ red pepper or yellow
- 20 capers
- Juice of two lemons squeezed
- 200 cc of extra virgin olive oil
Preparation:
Preparing an emulsion of oil and lemon juice
prepare and boil a pot with 1.5 liters of water, 200 cl of white wine vinegar, salt and 2 bay leaves and a handful of salt ;
Clean and thinly slice the tattlers, dip them in boiling water for 7 minutes, then remove with a strainer and drain them
Clean the shrimp and dip them in boiling water for 4 minutes, then remove with a strainer and drain them
Shell the mussels and soak for 3 minutes in 'boiling water then remove them with a strainer and drain them.
Put everything in a bowl, sprinkling of pepper onion into thin pieces of celery capers, garlic and parsley, drizzle with the emulsion of oil and lemon, and add salt and pepper to taste.
Let it rest in the refrigerator for 8 hours, stirring time to time.
Remove from the refrigerator an hour before the service at the table.
