Zucchine Mango and Apple

Serves 4

Peel the apples and the mango and cut into cubes of 2 or 3 cm. In a pan heat a spoon of olive oil and add in the sliced fruit.
Cook for 3 minutes, add water to complete the cooking, the cubes will be soft but not mushy. before the end of cooking, add the curry diluted in warm water.
Puree with an immersion blender until creamy possibly adding a dash of apple juice.
Cut the zucchini into cubes 2 or 3 cm and fairies dusk on a non-stick pan with a tablespoon of olive oil until crispy, add salt and cream of fruit cook for a minute or two and serve hot.
