Ingredients
- 8 ripe tomatoes, sliced
- Extra-virgin olive oil
- 85 g raspberries
- 2 x 125 g good quality mozzarella
- A handful of small basil leaves
- Raspberry vinegar
Place the tomato slices on a plate. add salt, pepper and olive oil.
wet the raspberries with a drizzle of raspberry vinegar and mash with a fork. Top the tomatoes with the torn mozzarella, drizzle over the raspberry dressing and spread with basil to serve.
