Ingredients for 6 muffins
- 130 g flour
- 30 g chickpea flour
- 4 g salt
- 9 g yeast
- 25 g extra virgin olive oil
- 70 g of soy milk
- 150 pumpkin boiled
- 1/2 white or red onion
steam the pumpkin, then shake it with a robot.
Peel and chop the onion finely with a knife.
In a large bowl mix the flour and the yeast then sift.
Mix everything and add the other ingredients, then add salt, milk and olive oil.
Finally hold the pumpkin puree and onion.
Mix all ingredients in the bowl until mixture is smooth and soft enough. Pour into muffin cups and bake in oven at 200 degrees for 20 minutes.
At the end let cool and serve .
