The couscous is a dish that lends itself to many interpretations and variations. One of these variants mainly involves the use of Seitan that has a big  protein content.  Be careful, it cannot be consumed by celiac .

Seitan gives more flavour to the couscous and is indicated in the vegetarian and vegan diets as one of the substitutes of meat proteins.

Ingredients:

Preparation

Let  dissolve the vegetable stock cubes in water with a little   oil, let cook  the Couscous  in the broth until has broth is  absorbed

cut the seitan in strips and cut the eggplant , sweet peppers and zucchini   into small cubes, put it In a pan with a little olive oil and blow up the mix ,  add salt and pepper

When the vegetables and seitan are cooked, add the couscous, stir and serve.

Suggested wine : Castellaccio 

It is a dish that can be enjoyed both hot and cold.
