Tuscan liver croutons

Toasted bread with chicken liver

Remove chicken liver gall, without breaking it and chop fine with parsley, let then cook in the butter few minutes , add the chopped anchovies and capers , salt , pepper and water, let cook few minutes mixing the ingredients.
 
Toast the bread slices and spread it with the prepared mixture.
 
Serve it  hot or cold.

recommended wine: Castellaccio

Ingredients serves 4-6 people

 
4 chicken livers
 
30 gr. of butter
 
a handful of parsley
 
2 anchovies, boned and desalted
 
1 tablespoon of capers
 
thin slices stale bread
