Marinated eggplant

Marinated eggplant with raw red beets

Preparation :
For the marinated eggplant
We turn on the oven to 180 degrees, cut the eggplant into cubetti.Prendiamo a cup and mix well tamari sauce, olive oil (3-4 tablespoons) and water (3/4 tbsp). In a pan put the baking paper, we have the eggplant and pour the sauce we have prepared. Mix well. Bake for approximately 20 minutes
 
For red beets marinated (raw)
We clean the barbarosse and cut into fine strips. The same thing we do with the onion. We put a salad bowl and add 4/5 tablespoons extra virgin olive oil, 2 tablespoons of apple cider vinegar and pepper. Mix well and let marinate in the refrigerator longer possible
 
For the hummus:
We put the chickpeas, avocado, lemon juice, tahini the sauce, garlic clove, a pinch of salt and pepper in a blender and frulliamo until you have a smooth sauce. Let rest in the fridge for a few hours.
 
This recipe is very fresh, suitable for an original and light lunch. It may be accompanied by a whole-grain bread or simply eaten as is.
