We are in the season of zucchini and I have prepared a delicious recipe (the zucchini is very versatile)
This dish is very simple, ideal as a light lunch or afternoon snack because is excellent hot or cold.
Zucchini crepes with greek sauce t
ingredients:
- 700g grated zucchini
- 1/4 cup of buckwheat (or chickpea flour)
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic
- 1 egg
- 2 tablespoons of extra virgin olive oil
- Salt, pepper q.b
for greek sauce
- 1 white greek yogurt (or Soja)
- 1 fresh cucumber
- 1 clove garlic
- Salt and pepper

Wash and crumble zucchini, let rest for about 15 min (so you eliminate the excess water) after which (along with zucchini) in a bowl we mix all ingredients. We put in a pan and fry a d'olio wire on both sides until they turn golden brown. We serve with the sauce to the Greek
Preparing the sauce
In a glass we put two / three tablespoons of greek yoghurt or white Soja, crumble cucumber, garlic and well mix with a spoon .
Add salt and pepper
