Normally fruit preserves are fruits or vegetables, that have been prepared and canned for long term storage.
Our jellies are heated with vintage wines instead of with friut juice. The preparation of these preserves traditionally involves the use of pectin as a gelling agent, although sugar may be used as well. In the case of Chianti's (the best known wine in the world) and Vin Santo's (typical dessert wine from Tuscany, quite sweet) Jellies the preparation is similar to fruit jelly; for Colombana's Grape (a white grape wich is one of the grape suitable for Vin Santo together with Malvasia and trebbiano Grape) Jelly, there is an additional step of filtering out the fruit pulp after the initial heating.

They don't have any alcohol because it is dried off during heating, they are free from coloring agents and preservatives. The flavour is incredibly faithful of that of contained wines; in effect, they give the impression to drink, because the taste of the wine which is the main ingredient is particularly recognizable.
The best combination for Jellies is every kind of cheese: for Vin Santo's and Colombana Grape's, very tasty and hard cheese like Pecorino, Provolone, Parmigiano Reggiano or Asiago. It can be nice to combine Chianti's Jelly with mellow cheese like ricotta or mascarpone. Anyway they are good also with various kinds of cold meats and salami (or Finocchiona, Soppressa, Zampone), with raw fish or boiled meat.
